Reverts #162 once rattler-build ships the fix for variants sharing a build directory (prefix-dev/rattler-build#2899, for #2898). Bump the rattler-build pin in pixi.toml to that release at the same time. Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>

Reverts #162: builds recipes in parallel again on Linux and macOS (
PARALLEL_BUILDS = f"3:{os.cpu_count()}"off Windows, as before).Draft until rattler-build ships the fix. #162 switched to one build at a time because rattler-build 0.77 gives two variants of a recipe the same build directory when they start in the same second (prefix-dev/rattler-build#2898; beluga's hdf5 variants failed on every humble and jazzy build branch). The fix is prefix-dev/rattler-build#2899.
