docs(listen): default CLI destination is named cli-{source} - #471

The listen long description said "{source}-cli", but
pkg/listen/connection.go creates the destination as "cli-<source>".
REFERENCE.md and the hookdeck.com CLI reference are generated from this
text, so fix it at the source.
Closes #423
