Add Auth0, Mollie and Deepgram doc-sourced samples

Adds three new providers, 27 samples in all, from the hookdeck/webhook-registry samples-doc/ delta (hookdeck/webhook-registry#89). Each file carries source.type: vendor-documentation, and each index.json records provenance.latest: {sourced_via: docs, sourced_on: 2026-10-08}.

Notes

• Headers: only content-type: application/json. All three put their discriminator in the body, if they have one, and doc examples can't produce signatures.
• Deepgram: callbacks have no event-type field. listen-pre-recorded is a file-name label taken from the reference page's slug, with topic_identifier: null. Docker Hub's push and Formstack's submission follow the same convention.
• Mollie: only 1 of 55 next-gen events is published as a complete event object. The per-API webhook pages show bare entity snapshots, which conflicts with webhooks-new, so those examples are held until a capture settles which shape is delivered.
• Auth0: the values are the catalog's filler ("sample" strings, the same id on every event), but every body is complete. Ten types are Early Access; this is noted in each file's source.note.
• Not included: Knock, because no complete webhook body exists anywhere in its docs or specs. Checkout.com digital_card_reprovisioned and payouts_disabled are also left out, because their doc bodies carry the wrong type.
• No overlap: none of these providers had a directory upstream, there is no scripts/ capture harness for any of them, and no existing files are changed.

yarn compile passes, and providers.json lists all three with docs provenance. yarn test passes 14/14.
